INGREDIENTS:

  • 1-1/4 cup Barely Barley Low Carb Flour

  • 3/8 cup equivalent sugar substitute (we used 3 tablespoons Truvia’s baking blend, but any sugar substitute will do)

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup almond milk

  • 1/8 cup coconut oil, melted

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup blueberries

Directions:

  1. Preheat oven to 350 deg F

  2. Place coconut oil container in hot water to melt

  3. In first bowl, combine dry ingredients

  4. In a separate bowl, combine wet ingredients separately

  5. Pour dry ingredients into wet ingredients while mixing. Mix until consistent dough.

  6. Fold blueberries into dough

  7. Shape dough into a circle, and cut the dough into 1/8 sections (cut it like a pizza!)

  8. Use non-stick cooking spray to coat pan and place dough pieces an inch apart

  9. Bake for 16-22 minutes

  10. Enjoy!
