Blueberry Muffin with Low Carb Pancake and Waffle Mix

Ingredients:

2 Cups of Grain4Grain Pancake and Waffle Mix

1/3 cup of sugar (or low-calorie sweetener equivalent)

2/3 cup of milk

2 Tbsp of vegetable oil

2 eggs

3/4 cups frozen blueberries

Directions:

1. Combine dry ingredients in bowl.

2. Combine wet ingredients in separate bowl.

3. Add wet ingredients to dry ingredients and mix.

4. Fold in blueberries.

5. Pour batter into 9 muffin liners

6. Bake at 375F for 15-18 mins
