Banana Bread Recipe

4oz Barely Barley Flour

4oz Brown rice flour

4oz Corn starch

1Tbsp Baking powder

1tsp Xanthan gum

1tsp Salt

1 cup sugar

125g  unsalted butter

3 eggs

500g ripe bananas mashed (about 5 bananas)

- In a bowl mix flour, baking powder, xanthan gum and salt

- In a mixer cream butter and sugar until light and fluffy then add eggs one at the time beating well after each egg

- With a hand mixer puree bananas

- Add pureed bananas to butter mixture

- Add flour mix in small increments and whisk it until all is combine

- Add walnuts, pecans or chocolate if you wish

- Pour batter into baking bread form lined with parchment paper

- Bake in the oven on 350F for 60-70 min. or until a wooden stick will come out clean.
