Banana Bread Recipe


  • 4oz Barely Barley Flour

  • 4oz Brown rice flour

  • 4oz Corn starch

  • 1Tbsp Baking powder

  • 1tsp Xanthan gum

  • 1tsp Salt

  • 1 cup sugar

  • 125g  unsalted butter

  • 3 eggs

  • 500g ripe bananas mashed (about 5 bananas)


  1. In a bowl mix flour, baking powder, xanthan gum and salt

  2. In a mixer cream butter and sugar until light and fluffy then add eggs one at the time beating well after each egg

  3. With a hand mixer puree bananas

  4. Add pureed bananas to butter mixture

  5. Add flour mix in small increments and whisk it until all is combine

  6. Add walnuts, pecans or chocolate if you wish

  7. Pour batter into baking bread form lined with parchment paper

  8. Bake in the oven on 350F for 60-70 min. or until a wooden stick will come out clean.
